Mad's Friday Favorites + Chocolate Muffins!

Friday Favorites

Happy Friday!! I had my first productive week all summer and I think its because I am SO excited about some projects I am working on. I am busy testing lots of new recipes for my high protein dinners e-book. Also, I have been playing around with sourdough recipes even though I told myself it would be a hobby!!! I need to learn to relax.

This weekend I am finally meeting a dear friends baby with all of my high school friends. In less than 2 years we've gone from 0 kids in the group to 4 babies! I cannot wait to see them all together. I also have a new niece that I will hopefully be meeting soon!

Now onto the faves...

  • Apples Peanut Butter and Marshmallow Fluff - This is my new evening snack obsession. I've always loved peanut butter and apples together so the other day when I cut my evening apple I decided to put a little marshmallow fluff in the bowl with the PB and it was INCREDIBLE! Apparently peanut butter and fluff sandwiches are a regional thing?! So if you aren't familiar this is fluff.
  • Naturium Glow Getter Body Wash - WOW I love this stuff. Saw a few people post about it on tiktok saying it is the perfect shave gel and I can confirm they are right. It is such a great body wash and when I shaved my legs with it they were soo smooth and moisturized even before I put on my body oil.
  • Aerie Lounge Set - Does it feel like each week I am just coming on here to hype up lounge wear? Because it does for me lol. Truthfully everything I shop for these days I think "will this work postpartum" aka will it work for nursing the baby and are the pants loose and comfortable. This waffle knit top and bottom is the perfect thing. I got the olive green color, but now I want the mauve as well!
  • Chom Chom Pet Hair Remover - This is a prime day purchase that absolutely lives up to the hype. If you have a shedding pet, you need one of these. My friend visited last weekend and she loved having our cats curl up on her chest, but she was not used to the shedding. We quickly rolled her shirt with the chom chom and she was good to go! Way better than a lint roller.

Olympic Village Chocolate Muffins

Videos of these things seem to be everywhere so I have to try them out!! this is my version.

  • 1 stick unsalted butter
  • 2 eggs
  • 1 cup buttermilk - can use whole milk instead
  • 1 cup granulated sugar
  • 1 tsp instant coffee powder
  • 1 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp kosher salt (1/4 tsp if using table salt)
  1. Preheat oven to 375F and line a 12 cup muffin pan with liners.
  2. Melt 1 stick (1/2 cup) unsalted butter and whisk with 2 eggs, 1 cup buttermilk, 1 cup granulated sugar and 1 tsp instant coffee powder.
  3. In a separate bowl combine 1 cup flour, 1/2 cup cocoa powder, 1 tsp baking soda, 1 tsp baking powder and 1/2 tsp kosher salt.
  4. Fold dry ingredients into wet and then fold in 1 cup chocolate chunks.
  5. Scoop into muffin pan, top with more chocolate chunks, and bake at 375F for 25 minutes.

Stay dry if storms are headed your way and have a wonderful weekend!

I am ALL for convenience and shortcuts (mom of 2 wild little boys here), but there are a few items lately that I have found are just so much better homemade. + I think I am saving money in the long run by making vs. buying. Super Soft Sandwich Bread - we realized our 2 year old LOVES a homemade uncrustable, but I just didn't love any of the soft white bread options at the grocery store. Now I use this recipe and a homemade uncrustable cutter to make our own. Salad Dressings - It's just so...

No matter who you're celebrating with, make valentine's day a night to remember with this perfect Valentines Day dinner menu. Start the evening with a small cheese board to share while you cook. I like to do a small wedge of triple cream brie, green grapes, fig jam and some simple salty crackers. For the entree I am making a reverse sear filet mignon with truffle mushroom risotto and air fryer asparagus. If you are not a mushroom person I highly recommend swapping that out for these mashed...
